2. What we process, and why

We process only the data each purpose requires. For each one we state the legal basis that allows it and how long we keep the information.

Managing your booking

Name, email address, telephone number, party size and booking details, so that we can organise the experience, contact you and issue proof of purchase.

Legal basis
Performance of a contract (art. 6.1.b GDPR).
Retention
For the duration of the service and, afterwards, blocked for the applicable limitation periods: six years for accounting and commercial obligations (art. 30 of the Spanish Commercial Code) and four years for tax purposes.

Allergies, intolerances and dietary requirements

The information about allergies and intolerances you give us when booking, so that we can adapt the menu and avoid putting your health at risk.

This is health data, which the Regulation treats as a special category. We process it only with your explicit consent, which you give by telling us when you book, and for the sole purpose of serving you safely. We do not use it for anything else, we do not share it with anyone beyond the staff preparing and serving your table, and we delete it once the experience has taken place. If you would rather not provide it, you can tell us in person on arrival, though we may then be unable to adapt every dish.

Legal basis
Explicit consent of the data subject (art. 9.2.a GDPR).
Retention
Deleted once the experience has taken place.

Digital recipe book and marketing

Your email address, to send you the experience's digital recipe book and, if you agree, news about new experiences and dates.

Legal basis
Your prior consent (art. 6.1.a GDPR), given through a separate, unticked box.
Retention
Until you withdraw your consent.

You can withdraw it at any time, without affecting your booking or the lawfulness of processing carried out beforehand, by writing to sentiregastro@gmail.com or using the unsubscribe link in any message we send.

Enquiries from travel professionals

Business contact details of agencies, DMCs and hotels asking about partnership, so that we can answer the enquiry and prepare a proposal.

Legal basis
Pre-contractual measures taken at the data subject's request (art. 6.1.b GDPR) and our legitimate interest in answering professional enquiries (art. 6.1.f GDPR).
Retention
One year from the last contact, unless a commercial relationship begins.

Legal obligations

Invoicing data, to meet the applicable tax and accounting obligations.

Legal basis
Compliance with a legal obligation (art. 6.1.c GDPR).
Retention
The periods required by law.

3. Where the data comes from

Normally you give it to us yourself. When a travel agency, hotel or other intermediary books on your behalf, we receive from them the data needed to provide the service. In that case it is the intermediary who must have informed you of that disclosure beforehand and, where allergies or intolerances are involved, obtained your consent.

4. Who receives the data

We do not sell or trade your data. It is accessed only by the suppliers we need in order to provide the service, who act as processors under contract:

  • Booking platform, to manage the calendar, payment and confirmation.
  • Web hosting provider, which serves this site.
  • Email provider, so that we can contact you.
  • Tax and accounting advisers, for invoicing.

Your data may also be disclosed to public authorities where there is a legal obligation to do so, in particular to the Spanish tax authority.

5. International transfers

Our booking platform belongs to a group headquartered in the United States, so some booking data may be processed outside the European Economic Area. Such transfers rely on the safeguards set out in Chapter V of the GDPR, such as the standard contractual clauses approved by the European Commission or the applicable adequacy framework. You can ask us about the specific safeguards by writing to sentiregastro@gmail.com.

6. Your rights

You may at any time exercise your rights of access, rectification, erasure, objection, restriction of processing and portability, and withdraw any consent you have given.

To do so, write to sentiregastro@gmail.com stating which right you wish to exercise. We may ask you to confirm your identity. We will reply within one month.

If you believe we have not handled your request properly, you may lodge a complaint with the Spanish Data Protection Agency (www.aepd.es), C/ Jorge Juan 6, 28001 Madrid.

7. Security

We apply appropriate technical and organisational measures to protect your data against destruction, loss, alteration and unauthorised access, taking into account the state of the art and the nature of the data processed.

8. Minors

Our experiences include the tasting of alcoholic drinks and are not aimed at minors. We do not knowingly collect data from children under fourteen. Bookings must be made by an adult, who is responsible for the data provided about the rest of the party.

9. Changes to this policy

We may update this policy to reflect changes in the law or new services. The date of the last revision appears at the top of this page.
